Ice Cream Sandwiches (Dairy Free/ Grain Free/ Vegan/ Gluten Free/ Refined Sugar Free/ Nut Free Option)

Summer time is the time for ice cream treats!! So you can’t have dairy. Who cares! There are plenty of treats that you can make that don’t have dairy! How about strawberry ice cream, or fudgesicles, or real fruit popsicles, or raspberry sorbet, or cashew milk ice cream? There are many more in my Ice Cream and Sorbet section.

Here is a new one for you. How about Ice Cream Sandwiches? I know right? Last year I kept trying to make them with the chocolate cookie and vanilla ice cream. I just couldn’t get them the way I wanted. For those of you who know me, I’m a bit of a perfectionist. When a reader asked for a bread recipe, I made it 16 times before publishing because I wanted it just right.

I digressed. I have made you a delicious grain free, healthy ice cream sandwich. You can also alter this recipe to be nut free. I hope you enjoy it and your summer!!

 

For the Cookie:

Double recipe of Chocolate Chip Chickpea Cookie Dough

I used a muffin scoop to make 16 large cookies. Flatten with a fork. Bake for 18-20 minutes. Let cool, then freeze.

For the Ice Cream:

Single recipe of Vanilla Cashew Ice Cream

For a Nut Free version use my Coconut Milk Ice Cream.

Make recipe and freeze, stirring every hour until frozen enough to resemble soft ice cream. For me, it took about three hours.

Use you muffin scoop to put ice cream onto bottom cookie, then top with another cookie. Refreeze.

Topping:

1/2 c. dark, dairy free chocolate

1 tsp. coconut oil

Melt in a double boiler, over low heat. Then spoon over half of you ice cream sandwich. Freeze in a covered container until ready to eat.

** You don’t have to add the extra melted chocolate. These sandwiches are delicious with and without it!
