Chicken and Veggie Noodle Bowl (Gluten Free/ Dairy Free/ Soy Free Option)

The past couple have months have been crazy, haven’t they? To think that the entire world could be brought to a stand still by a virus. It is crazy!

No matter where you are, I hope and pray that you and your family are staying safe!

I have been trying to stay busy working on an allergy friendly ebook. Many more yummy recipes coming your way, don’t you worry! Many successes and yes some failures. Lol I have also been doing quite a bit of yard work and gardening. I’m hoping for my veggie garden to flourish!

Here is an easy peasy dinner to keep you sane during this time! You can mix and match proteins, making it vegan by adding beans instead of chicken. Use up what ever cooked left over meat you have in your fridge. You can even add whatever veggies you have on hand. Remember to cut your veggies small and approximately the same size so they cook quickly and evenly.

Chicken and Veggie Noodle Bowl (Gluten Free/ Dairy Free/ Soy Free Option)

1 c. dry rice sticks

1 lb. boneless chicken- thinly sliced (you can use cooked chicken, just add at the end to heat up)

2 Tbsp. olive oil

2 lg. carrots- cut into match sticks

1 c. broccoli- chopped

1 red pepper- chopped

1 onion- chopped

2 Tbsp grated fresh ginger or 2 tsp. dry

2 cloves garlic- minced or 1 tsp. dry

Stir Fry Sauce:

1/4 c. tamari sauce or coconut aminos if soy free

1 Tbsp. arrowroot starch

1 tsp. sesame oil

Put a medium sized mesh strainer in a slightly larger bowl. Add you dry rice sticks and cover with boiling water for about 10 minutes. It will depend on the thickness that you have chosen as to how long to leave them. When they are soft chewy, but not quite done, remove from the boiling water and rinse with cold water. Set aside.

For the stir fry sauce, put tamari, arrowroot starch and sesame oil into a small jar and shake until mixed. Set aside.

Over medium heat in a large frying pan or wok, add olive oil and chicken. Saute for 3-4 minutes, add vegetables. Saute another 3-5 minutes, until vegetables are just tender. Add stir fry sauce and noodle. Mix together for 2 minutes and enjoy!!
