Chocolate Cake (Gluten Free/ Dairy Free/ Vegan Option/ Refined Sugar Free)

Who doesn’t just love Chocolate Cake? Alright, well chocolate in general…. Mmmmmm 🙂

As you get to know me you will realize that I am a HUGE chocolate fan!!!

…. Oh  sorry, I was just dreaming of chocolate… 🙂

So if  you are a fan of Chocolate Cake, then this is the recipe for you!

This cake is so moist and flavourful, that no one would know that it is gluten free, dairy free, and refined sugar free. I had a friend say to me, “Well if you took all of that out then whats left?” After she tried it, she fell in love…

I bet know that you will fall in love too!!

The Best Chocolate Cake

Chocolate Cake (Gluten Free/ Dairy Free/ Vegan Option/ Refined Sugar Free)

2 c. gluten free flour mix

3/4 c. raw cacao or cocoa

2 c. coconut palm sugar (or desired granular sugar)

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

2 eggs (if vegan add 2 gel eggs and 1 Tbsp. lemon juice**)

2 c.  milk alternative (I’ve used cashew, hemp and almond)

1/2 c. coconut oil-melted (or other mild oil)

2 tsp. vanilla

Preheat oven to 350 degrees
Mix dry ingredients together. In another bowl  beat wet ingredients together. Add dry ingredients in wet.
Beat on low for 30 seconds; scrape down sides of bowl. Beat on medium for for two minutes.
Pour batter into greased pan and bake on middle rack.
25-30 minutes for two 9 inch round pan or
42-47 minutes for 9 by 13 inch pan or until toothpick come out clean.

The Best Chocolate Cake

I quite often make a batch of mini cupcakes, icing them and freeze them, just to have on hand any time. Makes about 6-7 dozen and you bake them for 11-13 minutes or until toothpick comes out clean.
Here’s a way to make them that much cuter… Melt some dark chocolate and pipe it onto parchment paper in whatever shape you’d like. Let shapes cool, and put them on top of your iced cupcakes.

** For gel eggs mix 1/3 c. water with 2 Tbsp. ground chia

  2. Made this for my 30th Birthday yesterday and OMG Best. Cake. Ever! The sweet potato frosting had me a little worried, but those worries were soon diminished once I tried it! Yum yum yum! Thanks for this wonderful recipe!

  3. I made the cake exactly as written. It had been awhile since I had chocolate cake and its my favorite. I didn’t tell my family it was gluten free, they just thought I was being nice! I got up the next morning and was going to have cake with my coffee and IT WAS GONE! My husband and kids ate the whole darn thing. No more miss nice guy…next time I’m telling its gluten free!

  4. This definitely looks yummy. Wonder if I can use egg replacer to replace the eggs or perhaps use flax egg??

  5. I was wondering if i use dark/black cocoa i can make them more black for a halloween party?
