Summer is in full swing and what better way to enjoy it than with ice cream!!

How about Chocolate Chunk Ice Cream!!! The chunks of chocolate are an extra treat!

I have also added chunks of frozen brownies to make it extra special!

Chocolate Chunk Ice Cream

Chocolate Chunk Ice Cream (Dairy Free/ Vegan/ Paleo/ Refined Sugar Free)

1- 400 ml can coconut milk

1 tsp. vanilla

pinch of salt

2 Tbsp. cocoa or raw cacao

1/3-1/2 c. honey (depending on sweetness) (use maple syrup for vegan)

1/2 c. dark chocolate- chopped (Dairy Free)

Whisk together or mix in food processor. Then blend for 20 minutes in frozen ice cream maker.** Will be the consistency of soft ice cream. Put into small individual containers and freeze. When you want to eat the ice cream, take a container out of the fridge for about 10 minutes before hand.

**If you don’t have an ice cream maker, put bowl with mixed ingredients into the freezer. Stir every ten minutes for about an hour. Continue as above.

    • Lol… Well Cindy, there is coconut milk in it and cocoa. Cocoa is from a bean right? So you can say you are having milk and beans for breakfast 😀

  4. Thank you for such a delicious looking ice cream recipe! Thanks to coconut milk I am finally able to eat ice cream again after well over 20 years. And thanks for letting people know they can still make this even if they don’t own an ice cream maker (which I now own thanks to a gift card from my daughter)

      • I am in the process of making this for my hubby. When I opened up the can, it was all liquid and no coconut cream. I am not sure if it will work this way or not. Also, the ” ice cream” has been in the freezer for over an hour and it is still liquid. HELP!

        • Did you put your coconut milk in the fridge overnight before making it? What fat content did you use?

    • If you don’t mind diet ice cream then the carton will work, but for a rich creamy flavour you want the higher fat canned coconut milk 🙂
