Dark Chocolate Covered Strawberries

Valentines Day is tomorrow. With all of the commercialization, you can get put off. Other than a card for my hunny, I do not fall into the Valentine’s Day trap. I make us a nice dinner, dessert and we spend a lovely evening at home. This year I am making honey garlic ribs, apple sweet potato and asparagus.

I also like to make some sweets that I don’t often make. I’ll be making Molten Lava Cakes and Dark Chocolate Covered Strawberries.

If you buy the pre-made chocolate covered strawberries in the store, you will pay a small fortune. These are very simple to make and just as delicious as the store bought ones. (I think more so)

Dark Chocolate Covered Strawberries

Dark Chocolate Covered Strawberries

1 cup dark chocolate( I use dark 70-85% dairy free)- broken up

10-12 strawberries- washed and dried

toppings in desired- ground nuts, coconut

In a double boiler**, bring an inch of water to a simmer in the bottom pan and add chocolate to the upper pan. Stir chocolate until melted and remover from heat.

Using the stems/leaves as a handle dip strawberries into the melted chocolate, rolling to coat evenly. If using an extra coating- dip into coating then place strawberry onto parchment paper lined cookie sheet.

Place into the fridge to cool. Enjoy. I have made these the day before and they work fine.

** If you do not have a double boiler you can use a small sauce pan and a larger metal bowl for the top.

Chocolate Yule Log (Gluten Free/ Dairy Free)

I saw those frozen yule logs in one of the grocery stores last month. Again I went, hmm I can make that.
So I took one of my old recipes and changed the cake part, then used my chocolate ice cream recipe for the middle, and melted chocolate for the topping.
Since its only two days til Christmas and this is my first try doing this allergy free, it won’t be decorated like I normally would.
We’ll be eating on Christmas so I won’t technically know how it tastes all together until then.

Yule Log Ice Cream Cake

Chocolate Yule Log (Gluten Free/ Dairy Free)
5 eggs, separated
1/3 c. plus 1/3 c. palm sugar (or desired granular sugar)
1/2 c. gluten free flour mix
1/4 tsp. xanthan gum
1/4 c. cocoa
1/4 tsp. salt
1/2 tsp. cream of tarter

1 c. dark chocolate
one batch of chocolate ice cream (I usually don’t add in the chocolate chunks for this)
Separate eggs into different mixing bowls. Let stand at room temperature for 30 minutes.
Line a baking tray 15″ by 10″ with parchment paper, then spray paper with cooking spray. Set aside.
Preheat oven to 350 degrees.
Beat egg yolks and 1/3 c.palm sugar until fluffy. They will lighten in colour and the sugar will be dissolved in. Mix flour, xanthan gum, cocoa and salt together and add to yolk mixture, stir together.
Clean off your beaters, and beat egg whites until foamy. Add cream of tarter and beat until egg forms soft peaks. Gradually add in remaining sugar and beat until stiff peaks form. Fold a small amount of the egg mixture into chocolate mixture. Mix together. Then fold in remaining egg mixture just until mixed. Don’t over mix.  Spread the batter evenly onto the parchment paper lined cookie sheet.
Bake for 13-15 minutes or until cake springs back when touched. Take out and let cool for five minutes.
Sprinkle some palm sugar over cake and roll cake in a clean tea towel. Cover with saran and let cool in the fridge.
Make a batch of chocolate ice cream. Gently unwrap the cake and spread ice cream over the cake rolling it back up as you spread filling.  Put into the freezer for a few hours. I used about half the batch of ice cream and froze the unused portion.
With a double boiler, melt chocolate and drizzle over frozen cake and replace it to the freezer..

You can take the cake out for about 15 minutes before serving to let it soften to make it easier for slicing.

You can even decorate it with a little greenery.

A Little Prep Work In The Kitchen Makes For A More Enjoyable Summer!!

So summer is here and people get really busy!!!

Getting Ready For Summer

Everyone is getting things ready. You’re doing yard work, opening up the pool, going up to the cottage.
There are trips to the zoo, beach, etc. You also get last minute guests showing up to spend the afternoon and possibly stay for dinner.
Why not spend some extra time on your shopping day to make your summer more convenient and enjoyable?

Getting Ready For Summer

Yes the grocery store have convenience  items, but usually people with allergies can’t take advantage of them. If you can, then the stores make them much more expensive and full of sodium or other chemicals.

Instead, make your own.

After coming home from the grocery store with all of your meat, spend some time preparing it before freezing it.
Say there were boneless chicken breasts or pork loin on sale; why not make a simple Souvlaki Marinade;

Cut up your meat into cubes; put your meat into meal size zippered bags along with your marinade, mark it and freeze it. Make up a few packages and you’re set to make chicken or pork souvlaki meat sticks easily.

You can even put your meat and veggies in the same grill pan and skip the threading onto skewers.

If steak happens to be on sale; make up a Beef Marinade; put your meat into meal size zippered bags along with your marinade, mark it and freeze it.

Simple Beef Marinade

Another thing that I have been playing with is my Ranch Dressing. I really enjoy eating it as a dip and dressing on salads.  One downfall can be that it only lasts for about three days in the fridge. So I have made some, put them in small containers, and frozen them. I was so happy when I defrosted and tried them. Still great for a dip with veggies or on a salad. Just give a little stir and your may need to add a tiny amount of water. I would only freeze it for up to one month.

As well, you can make Honey Garlic Sauce and BBQ Sauce and freeze them in small zippered bags or small containers. That way you always have some stocked up. How about a good size batch of Vinaigrette Dressing on hand, to round out your meal?

So there are some other ways to be ready for summer.
If you do some prep work, then you can enjoy your busier days without worrying about whats for dinner!
