Split Pea Soup with Ham (Gluten Free/ Grain Free/ Dairy Free)

Happy Thanksgiving to all of my Canadian friends!! Yes, here in Canada we celebrate Thanksgiving on the second Monday of October, where as the United States celebrates on the last Thursday of November. Whenever you are celebrating I pray that you will have a wonderful day filled with family, friends and of course delicious food!

For those having turkey, you may want to try Chicken Pot Pie (yes you can use turkey) to use up some of your leftovers.

Then there are those who will celebrate with a ham (or a turkey as well). We usually buy those hams that have the bone going right through the middle. I think it is part of the butt. Yes I could Google it so that I know for sure, but guess what, it doesn’t matter to me. All that matters is that ham is delicious! Now onto what you are going to do… You have cut most of the meat off the bone and save the bone for your soup. If you forgot to save your bone them you can just use two cups of diced up ham for this soup.

 

As my hubby says, this is a “stick to your ribs” kinda soup!

Split Pea Soup

Split Pea Soup with Ham (Gluten Free/ Grain Free/ Dairy Free)

2 tsp. olive oil

1 medium onion

2 medium carrots

2 ribs of celery

2 c. dried split peas

2 tsp.thyme

16 c. water

1 ham bone-with meat on it or ham shanks

Dice onions, carrots and celery. Place into large pot with oil. Saute on medium heat for approximately 10 minutes. Add water, split peas, thyme and ham bone. Don’t worry if the water doesn’t cover the bone. Just flip the bone over after about an hour. Bring water to a boil, then turn down heat to medium low. Let simmer for approximately 2 hours or until peas are soft (well they pretty much dissolve) and soup is thickened. When soup is cooked, remove bone (it should be falling apart and the meat falling off of it) and the meat. Discard the bones and cut up meat into bite size pieces.

Store soup in covered container in the fridge for up to three days. Freezes well. Soup thickens as it cools. The first day is fine, but the next days you may need to add water to thin soup out.

Ginger Sesame Chicken Stir Fry (Paleo/ Gluten Free/ Grain Free/ Soy Free)

So having a new little grand baby around makes life much busier! I am working as well as helping out my daughter when and where I can.

Some days I really need a quick one pot recipe that will help me use up many left over veggies in my fridge. A stir fry is a great option for this. Add in my ginger sesame dressing for a delicious kick! You can have this dinner cooked and on the table in less than a half hour. This great stir fry will not only fill your belly quickly, but also leave plenty of time for all the other things you need to get done on a busy evening!

Ginger-Sesame Chicken Stir Fry

Ginger Sesame Chicken Stir Fry (Paleo/ Gluten Free/ Grain Free/ Soy Free)

1 lb. boneless skinless chicken

3 Tbsp. olive oil (or desired oil)

1 large onion- sliced

4 c. assorted veggies- bok choy, broccoli, peppers, celery, carrot

2 green onions

1/2 c. ginger sesame dressing

2 Tbsp. sesame seeds for garnish

In a large skillet add in oil and sliced chicken. Saute for five minutes on medium heat, stirring frequently. Add in onion and 4 cups of desired veggies. Stir thoroughly and let cook for 8-10 minutes. Add in ginger sesame dressing and green onions. Cook for an additional 5 minutes and serve.

Garnish with sesame seeds if desired.

Homemade Hamburger Helper (Gluten Free/ Dairy Free)

Let’s face it, Hamburger Helper was a staple growing up. Who didn’t love the convenience of opening up a box and almost everything being done. I even did this when my kids were small.

I think back now and realize that it may not have been the best choice I could have made. Now I wouldn’t even dream of making a boxed meal. Let alone the fact that my allergies wouldn’t permit it. It really doesn’t take much more time to make it from scratch and definitely tastes much better. You can make it a little different each time by switching up pastas and adding in different veggies.

Try this quick and easy meal tonight!

Homemade Hamberger Helper w Goat Cheese

Homemade Hamburger Helper (Gluten Free/ Dairy Free)

1 lb. ground beef, turkey or chicken

1 medium size onion-diced

1 clove garlic- minced

added veggies if desired *

2 tsp. mustard powder

1 tsp. smoked paprika

1 tsp. cumin

1/2 sea salt

1/2 tsp. black pepper

2 1/2 c. gluten free pene pasta (or desired pasta)

1 1/2 c. milk alternative (I use coconut milk)

2 c. water

1/2 c. goat cheese (or desired cheese)***** Check changes for dairy free

In a large skillet over medium heat, brown ground meat. Stir in onions and added veggies if adding any, let cook for five minutes. Add in garlic, spices, water and milk. Stir thoroughly. Stir in pasta and cover. Cook for 11-13 minutes or until pasta is to desired texture. Add in crumbled goat cheese and stir thoroughly.

*You can add up to 2 cups of desired veggies if you would like, ex: zucchini, peppers, broccoli, cauliflower, etc.

***** To make completely dairy free, use 1/2 of Cashew Cream instead of goat cheese. Still a fantastic flavour!
