Black Bean & Veggie Bowl (Gluten Free/ Dairy Free/ Vegan)

So we have Meatless Mondays. We have people telling us that we should have a bunch of protein at breakfast time. We are always looking for something different for lunches. We are also looking for a dish that we can feed our vegan friends.

Black Bean & Veggie Bowl

This dish is everything rolled into one. It is packed with tons of protein along with great vegetables and wonderful flavour! Have it for any meal of the day!

Black Bean & Veggie Bowl

Black Bean & Veggie Bowl (Gluten Free/ Dairy Free/ Vegan)

1 Tbsp. olive oil

1 medium sweet potato- peeled and diced

1 medium carrot- peeled and diced

1 medium onion- diced

1 medium pepper- dice (your choice of colour)

2 c. cabbage- chopped

1 handful of spinach or kale ripped into small pieces

1 tsp. ground cumin

1-19 oz. can black beans- drained and rinsed

sea salt and pepper to taste

In a large skillet, add olive oil sweet potato and carrot. Saute on medium heat with lid for five minutes, stirring every couple of minutes. Add in onion, pepper, cumin and cabbage. Mix well. Saute for another ten minutes. Add kale and beans. Cook for five more minutes then serve. Leftovers can be kept in a sealed container in the fridge for up to three days.

Chocolate Chip Pancakes (Gluten Free/ Dairy Free/ Vegan)

So I had three of my grandchildren over the other day. I was babysitting while my daughter in law went for an ultrasound to find out what their forth will be. (Sorry, nope, not allowed to tell yet…)

Anyway, we were talking about what the kids did when they went camping and what kinds of foods they ate. They had had pancakes the one morning for breakfast. They were plain pancakes but they had really wanted chocolate chip pancakes. Well who says that pancakes have to be for breakfast.

 

Chocolate Chip Pancakes

I decided that chocolate chip pancakes would be a great lunch for myself and three small children. So we measured and stirred and cooked. They enjoy cooking and baking with their Oma (me). Each of them had seconds, so I’d say they were a hit! As I said, pancakes aren’t just for breakfast! They can also be a delicious lunch.

Chocolate Chip Pancakes

 

Chocolate Chip Pancakes (Gluten Free/ Dairy Free/ Vegan)

1 1/4 c. gluten free flour mix

1/2 tsp. xanthan gum

2 tsp. baking powder

1 tsp. baking soda

1/4 tsp. sea salt

2 gel chia eggs (2 Tbsp. ground chia mixed with 6 Tbsp. water) ***

4 Tbsp. coconut oil- melted-more for cooking (or desired neutral flavoured oil)

1 tsp. vanilla

1 1/2 c. milk alternative (I use coconut milk)

1 c. dairy free chocolate chips

*** You can use two regular eggs if not vegan***

In a medium size bowl whisk together flour, xanthan gum, baking powder, baking soda and salt.

Add in chia eggs, oil, vanilla and milk alternative. Stir until completely mixed. Stir in chocolate chips.

Put 1/2 tsp. coconut oil in skillet that is on medium heat. Laddle in approximately 2 tablespoons of pancake batter onto hot skillet.

Cook approximately 3 minutes on first side or until top is covered with bubbles, then carefully flip over pancake cooking another two minutes. Add more oil as needed.

Makes 16 mini pancakes. These freeze well.

Double Apple Cinnamon Pancakes (Gluten Free/ Dairy Free/ Vegan/ Egg Free/ Refined Sugar Free)

Nothing say fall like the taste and aroma of cinnamon and apples cooking! My husband and I were walking through the applefest in our town last weekend. The aroma of apples and cinnamon were everywhere! My husband, not having any of my food issues bought many wonderful baked apple treats. When we got home I immediately took out some Upside Down Apple Caramel Cake from my freezer. Delicious!

Sunday morning I decided that I had to whip up a batch of my Apple Cinnamon Pancakes and add a lovely warm Apple Maple Syrup for the top. This is the ultimate in apples and cinnamon! Try them together or separately.

Double Apple Cinnamon Pancakes

Double Apple Cinnamon Pancakes (Gluten Free/ Dairy Free/ Vegan/ Egg Free/ Refined Sugar Free)

Pancakes:

1/2 c. gluten free flour mix

1/2 c. sorghum flour (or 1/2 c. more of gluten free flour)

1/2 c. ground flax

2 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. xanthan gum

3 tsp. ground cinnamon

2 Tbsp. coconut oil plus a little extra for cooking (or other mild oil)

2 c. milk alternative (I use coconut milk)

1 Tbsp. lemon juice

2 c. grated apple ( I used gala and kept on the skins)

Apple Maple Syrup:

2 c. apples- peeled and diced (I used two gala)

1 Tbsp. coconut oil

2/3 c. maple syrup

2 tsp. ground cinnamon

To make Pancakes:

In a small bowl whisk together flours, flax, xanthan gum, baking powder, baking soda and cinnamon. Set aside.

In a medium size bowl stir together coconut oil, milk alternative, lemon juice and grated apple. Add in dry mixture and stir thoroughly.

Put 1/2 tsp. coconut oil in skillet that is on medium heat. Laddle in approximately 3 Tablespoons of pancake batter onto hot skillet, flattening batter slightly.

Cook approximately 3 minutes on first side or until top is covered with bubbles, then carefully flip over pancake cooking another two minutes. Add more oil as needed.

Makes approximately 8 pancakes. Pancakes freeze well.

To make Apple Maple Syrup:

In an medium size pan over medium low heat melt coconut oil and add diced apples and cinnamon. Let simmer approximately five minutes stirring occasionally.

Sweet Potato Bacon Hash (Gluten Free/ Dairy Free/ Egg Free/ Paleo)

When I was younger, I’m talking my 20’s and 30’s, I never ate breakfast. I survived on a pot of coffee for the morning, then ate a decent lunch. I had found that when I ate, what I thought was a healthy breakfast, I would be starving by 10 am and eating the entire rest of the day none stop. What I didn’t realize at the time was that most commercial cereals are definitely not healthy.

The past few years, before my food allergies, I had started eating breakfast much more. I was eating more protein, still carbs, and eggs. When I found out that I had food allergies, I knew I that needed to eat breakfast, but what? Most of the time I would have leftovers, smoothies or omelettes. As long as I had a good amount of protein, I would be satisfied for many hours.

You may remember that I went in for more food allergy/sensitivity testing(IGG). I knew there were more foods that were affecting me. One of the things that tested relatively high was eggs. (I am still putting them in some of my baking, but no longer having them on their own) I was quite concerned on what else I could have for breakfast. When I am not working on the weekend, our Sunday morning breakfasts and some week days would consist of bacon or ham, hash browns, and of course eggs.

Well, come on… Another thing I have to give up? Not that I was Ever a big egg fan. As a child, I wouldn’t eat them. As an adult I would only eat them scrambled or in a omelette that was filled with veggies. I knew that they had lots of protein and would help me stay filled up for longer.

I decided that I had to make a new kind of “omelette” so to speak. The first time I made this, I just had many sauteed vegetables to eat. Pretty good, but it was lacking in the flavour and definitely in the protein. The second time, I had had some left over bacon in the fridge and decided to throw that in. Oh my goodness!

Bacon really does make everything better!! A new breakfast for me and you as well, was created! I have made this so many times over the past month. My husband is going to wonder where all there bacon is going… Ha ha ha, don’t tell him okay. It will be our little secret! :-X

I have posted the pictures of my breakfast on my Facebook site and was asked for the recipe, so here you are. I hope that you enjoy it as much as I do.

This serves two as a main breakfast.

Sweet Potato Bacon Hash

Sweet Potato Bacon Hash (Gluten Free/ Dairy Free/ Egg Free)

6 slices bacon- chopped

1 small sweet potato- diced small

1 medium onion- diced

1 pepper- diced (red, green, yellow or mix them up)

1 small zucchini- diced

1 Tbsp. coconut oil or extra bacon fat

In a medium frying pan, cook bacon until just under desired doneness, over medium low heat.(it will cook more in the pan with the veggies) Remove bacon and cut into bite sized pieces.

Drain bacon grease but save it for later. Add sweet potato to pan and 1/4 cup of water, cover with lid and let steam for approximately five minutes. After the five minutes, drain excess water. Add oil or reserved fat, onion and peppers to sweet potato. Saute for approximately ten minutes over medium low heat.

Add in bacon and zucchini. Saute for an additional five minutes or until desired tenderness.

Spring Asparagus Crustless Quiche (Paleo/ Gluten Free/ Dairy Free)

Spring has sprung and so has Asparagus!!!

Asparagus tastes like spring to me, because when it is fresh in our markets your know that warm weather has sprung as well 🙂

This dish is lovely as a breakfast, brunch, lunch or dinner. It’s so versatile that it compliments many dishes…

Spring Asparagus Quiche

Spring Asparagus Crustless Quiche (Paleo/ Gluten Free/ Dairy Free/ Vegetarian)

1 tsp. olive oil

1 pound asparagus-chopped into one inch pieces

1 medium onion- diced

1 clove garlic- minced

5 large eggs

2/3 c. almond milk ( or desired milk)

1/2 tsp each sea salt and pepper

1/4 c. chopped chives

Preheat oven to 350 degrees.

In a medium frying pan saute asparagus and onion in olive oil on medium heat for five minutes; add garlic and cook for one more minute.

Pour into 9 inch pie plate. Break eggs into a bowl and beat with a fork; pour on top of vegetable mixture.

Add milk, salt, pepper, chives. Stir lightly to combine all the ingredients.

Bake uncovered for 35-45 or until eggs are set.

Asparagus Quiche

Makes six servings.

Cranapple Breakfast Cookies (Gluten Free/ Dairy Free/ Refined Sugar Free)

So one morning I was hungry and didn’t have my usual ingredients to make Smoothie. There are many things that I could have made, but what I really wanted was a cookie… 🙂

I’m a big girl, with no kids in the house anymore so I could have gotten away with eating a cookie and no one knowing.

Then I had a thought… What about making a breakfast cookie that would be quite healthy and completely legitimate to eat first thing in the morning… Filled with healthy fats, oats, flax and fruit.

Alas a new cookie and breakfast was created! If you have a child that just doesn’t like eating breakfast or doesn’t have time, just pop a few of these into them 🙂

Cranapple Breakfast Cookies 2

Cranapple Breakfast Cookies (Gluten Free/ Dairy Free/ Refined Sugar Free)

Dry Ingredients:

1 c. gluten free oats (I use Only Oats)

3 Tbsp. coconut flour

1/2 tsp. baking soda

1/4 tsp. sea salt

3/4 c. palm sugar (or desired granular sugar)

1/4 c. ground flax

1 Tbsp. cinnamon

1/2 c. chopped walnuts

1/2 c. chopped dried cranberries

Wet Ingredients:

1/3 c. coconut oil

2 eggs

1 tsp. vanilla

1 c. grated apple **

Preheat oven to 375 degrees.

In a medium size bowl, whisk together all the dry ingredients. Set aside.

In another medium size bowl, cream coconut oil. Add in eggs and vanilla, cream. Stir in grated apple.

Add dry ingredients into wet ingredients and stir thoroughly.

Drop by spoonful onto parchment paper lined cookie sheet. Flatten cookies with fork.

For teaspoon size cookies bake for 10-11 minutes or until golden.

For tablespoon size cookies bake for 12-13 minutes or until golden.

Let cook completely. Store in sealed container on the counter for approximately three days or you can freeze them.

** One cup of apple is approximately one medium sized apple. I grate it with the skin on for added fiber. You can peel the apple before grating if desired.

I don’t think there is better than a nice breakfast to get your day started off right…
What’s even better this time is that I was able to have a lovely piece of toast with my omelette.

1/4 c. onion- diced
1/4 c. green or red pepper- diced
1 small pepperoni stick- cut up **
3 eggs
2 Tbsp. Water
1/3 c. pizza sauce
1/4 c. Daiya Mozzarella cheese (or other non-dairy cheese)

Morning Glory Muffins (Gluten Free/ Dairy Free/ Refined Sugar free)

I can not seem to keep these muffins in my house very long. I guess that is a compliment to the chef.
One of my friends tried them and said that each mouthful was tantalizing. She told me that she savored every bite, tasting all the different flavours. I said that when I finish my cook book she can write my recipe reviews.

Morning Glory Muffins

One thing I can say is that I have never tasted a better morning glory muffin.

Morning Glory Muffins (Gluten Free/ Dairy Free/ Refined Sugar free)
1 c. gluten free flour mix
1/2 c. sorghum flour
3/4 tsp. xanthan gum
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
3/4 c. palm sugar (or other granulated sugar)
3 tsp. ground cinnamon
1/4 c. ground flax
1/2 c. chopped walnuts
1/2 c. raisins
1/2 c. unsweetened shredded coconut

3 eggs
1/3 c. coconut oil (melted)-(or other mild oil)
1/2 c. unsweetened apple sauce
2 c. shredded carrots
1 c. grated apple

Preheat the oven to 400 degrees.
In a medium size bowl, whisk together flours, gum, baking powder, baking soda, sugar and cinnamon. Then add walnuts, raisins, and coconut.* Set aside.

In another bowl beat together eggs, coconut oil, apple sauce, carrot and apple. Add wet ingredients to dry. Stir until just mixed. Spoon batter into greased muffins tins.

You can either make 12 larger muffins or 16 smaller ones. Bake muffins for 15-18 minutes or until toothpick comes out clean.

Enjoy a nice muffin and a warm cup of tea!

They freeze well!!
*If you don’t like raisins or coconut or want to change the nuts, go ahead. Mix and match.

*If you don’t like or can’t have flax you change it to sunflower seeds or chopped nuts.

Cinnamon Loaf (Gluten Free/ Dairy Free/ Refined Sugar Free)

Cinnamon is a wonderful flavour!! It is also full of health benefits!

Isn’t it wonderful that it can make foods taste so delicious and be healthy for us.

You can take this cinnamon loaf to anyone house, and they would never know that is was gluten free. I remember the first time I took this over to a friend’s house. She couldn’t believe that I could eat it, because she thought that it was a regular loaf. She was pleasantly surprised!

Cinnamon Loaf

 

Cinnamon Loaf (Gluten Free/ Dairy Free/ Refined Sugar Free)

Topping:
2 Tbsp. palm sugar (or other granular sugar)
2 tsp. cinnamon
2 tsp. unsweetened apple sauce

Loaf:
2 c.gluten free flour mix
1 tsp. xanthan gum
1 c. palm sugar (or other granular sugar)
2 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon

1 c. butter milk**
1/4 c. coconut oil (melted) - or other mild oil
1/4 c. unsweetened apple sauce
3 eggs
2 tsp. vanilla

Preheat oven to 350 degrees
Mix topping ingredients together in a small bowl and set aside.

Mix dry ingredients together in one bowl. Mix wet ingredients together in another bowl. Then mix dry ingredients into wet and beat for about two minutes. Pour into greased loaf pan. Sprinkle topping on top of batter, then using a knife swirl in topping giving a marble effect.
Bake for 50-60 minutes or until toothpick comes out clean when testing loaf.
Let sit in pan for about 15 minutes before removing loaf from pan. Let cool on rack.

**To make buttermilk, put 1 Tbsp. lemon juice into cup and add enough almond or rice milk to make 1 cup.
