Vanilla Ice Cream (Dairy Free/ Refined Sugar Free/ Paleo/ Vegan Option/ Gluten Free)

With summer slowly coming, so does the desire for cool summer treats such as ice cream! As with myStrawberry Ice Cream, this is a creamy snack that I figured out how to make soon after my food allergies were realized. I have always enjoyed making ice cream cakes, especially my Black Forest Ice Cream Cake. Making dairy free ice cream was inevitable!

Coconut Milk Vanilla Ice Cream

Delicious!!

2-400 ml. cans coconut milk (Place your milk in the fridge overnight)

3/4 c. honey ( maple syrup for vegan)

2 tsp. vanilla

4 egg yolks (omit for vegan- I frequently make this recipe without eggs)

pinch of sea salt

Puree all ingredients in food processor. Then blend mixture in frozen ice cream maker ** for twenty minutes. Will be consistency of soft ice cream. Β For convenience, I put into small individual containers and freeze. When you want to eat the ice cream, take a container out of the freezer for 10-15 minutes to soften. **If you don’t have an ice cream maker put bowl of mixture into the freezer and stir every thirty minutes for a few hours.

    1. You don’t need an ice cream maker to make it. Half the time I don’t even use mine. I added instructions how to make ice cream without an ice cream maker πŸ™‚

  6. Can you use cream of coconut in a can or a carton of vanilla coconut milK?

    1. I make it with coconut milk in a can. Usually one higher fat(12-17%) and one lower(5-7%). I didn’t make it from a carton once, but with the low fat count it tasted like diet ice cream.

    1. Sorry you will have to be patient. πŸ™‚ I have tried that, even putting the can in the freezer for a few hours. Never seems to work out right. Doesn’t freeze properly.

  9. I know this post is older, but I just saw this on Pinterest. My son was recently tested for allergies. Positive for diary, peanuts, egg whites, soy and wheat. Yikes! I’m switching the whole family to more allergy-friendly food to make my life easier. I think i’m going to make this tomorrow! Thanks so much.

      1. I am just going dairy free and relearning my shopping and cooking. Please pardon my learning curve. The recipe posted does not separate the coconut milk. I am curious about the uncooked eggs also. I am used to making traditional ice cream in which the eggs are cooked. Is this recipe mis-posted?

        1. No it’s not a mis-post. I don’t separate the coconut milk and I add in raw eggs. You can easily leave the eggs out. I don’t add them in anymore.
