Ginger Sesame Dressing/ Marinade (Gluten Free/ Refined Sugar Free/ Paleo/ Soy Free and Vegan Options)

I have been adding ginger into recipes and food quite frequently these days. I really enjoy the flavour that freshly grated ginger brings to a dish.

This is fantastic as a marinade for beef, chicken or pork! Try my Ginger Sesame Chicken Stir Fry, Chicken Skewers, or even Roasted Veggies.

With summer brings many more salads! Why not impress people by making this healthy delicious dressing for your next gathering! Whether it tops a garden salad, Ginger Sesame Oriental Cabbage Salad, a Ginger Sesame Pasta Salad, your guests are sure to love it.

Ginger Sesame Dressing

Ginger Sesame Dressing/Marinade (Gluten Free/ Refined Sugar Free/ Paleo/ Soy Free and Vegan Options)

1/2 c. raw apple cider vinegar

1/3 c. olive oil

1/4 c. raw honey(maple syrup for vegan)

2 Tbsp Bragg’s soy sauce or coconut aminos for soy free

1 Tbsp. grated raw ginger

2 tsp. sesame seeds

1/2 tsp. sesame oil (optional)

1 clove garlic grated

1/4. tsp. xantham gum (optional but helps keeps the dressing from separating)

Mix everything together in a jar and shake it up. Keep refrigerated for up to two weeks.

If using as a marinade, add to 1-2 lbs. of meat 30 minutes to 8 hours before cooking.

Paleo Beef Nachos (Corn Free/ Gluten Free/ Dairy Free/ Grain Free)

Nachos are a great food. Unfortunately they are also a dish that many of us with food allergies can’t order in a restaurant. Some people can’t even have the corn tortilla chips. Sweet potato chips are a great alternative.

There is no reason to feel deprived when you have multiple food allergies! Enjoy!!

Paleo Beef Nacho- Corn Free

Paleo Beef Nachos (Corn Free/ Gluten Free/ Dairy Free/ Grain Free)

Two batches of Sweet Potato Chips

For the meat:

1/2 lb. ground beef

1/2 batch of taco seasoning

1/2 batch of cashew cream

Other toppings such as onions, peppers, tomatoes, jalapenos

Preheat oven to 375 degrees

Brown ground beef in skillet over medium heat and add taco seasoning to it. Let meat mixture sit five minutes. Place the sweet potato chips on parchment paper lined baking sheet. Top with meat mixture. Then cashew cream and whatever other topping you like.

Paleo Beef Nachos

Heat in oven for ten minutes. Enjoy!! Serves two.

Baked Sweet Potato Chips (Paleo/ Gluten Free/ Vegan)

I don’t know about you but I am just not as happy with some commercially made products anymore. I am guessing it’s because I am making most of my own foods. It may also be all that I am far more aware of labels. I really don’t want to put that many chemicals and preservatives into my body. Enough of my rant…

Some times I want a snack. Okay let’s be honest, I want a snack every day. I just change my mind all the time as to what I want the snack of the day to be. Lately I have be obsessed with sweet potatoes!! I eat them roasted, mashed with apples, in lasagna(yes you will get that recipe at some point, in soups  and I even eat them in my icings here and here. So why not have them as chips? Or even as the base for nachos? As I said, I have been obsessed with sweet potatoes lately!

Baked Sweet Potato Chips

Baked Sweet Potato Chips (Paleo/ Vegan/ Gluten Free)

1 medium sized sweet potato

2 tsp. olive oil

sea salt

Preheat oven to 375 degrees

Line two baking sheets with parchment paper. Wash sweet potato then thinly slice (I use my mandolin) Either toss sweet potato slices in olive oil or spray each side. I use my olive oil spray pump.

Sweet Potato Chips

Place slices onto parchment paper being careful not to over lap. Sprinkle with sea salt. Bake for 15 minutes. Take pans out, flipping over potatoes and alternating pans top rack to bottom.

Bake for 15-20 more minutes. Watch chips carefully in the last ten minutes. As some of the chips start to brown I remove them individually (or else those ones will burn). When all chips are done, remove from oven and let sit for 2-5 minutes to crisp up.

I only make these as I want them, or for up to two days. Store in a sealed container.  They tend to go soggy if you let them sit too long.

Slow Cooker Fall Off the Bone Ribs with Honey Garlic Sauce (Gluten Free/ Refined Sugar Free/ Paleo)

One thing that I love eating would have to be ribs!! I don’t particularly like to eat them in front of people. Well, the hubby is fine, but as know know ribs can be messy.

The one things is that when they are done properly, slow cooked and falling off the bone you get to the point that you just don’t care who can see you eating them!

Slow Cooker Fall Off The Bone Ribs

Slow Cooker Fall Off The Bone Ribs with Honey Garlic Sauce (Gluten Free/ Refined Sugar Free/ Paleo)

2 lbs. side or back ribs

2 Tbsp. gluten free Spice Mix

1 batch of Honey Garlic Sauce

Cut ribs into approximately four inch sections, cutting parallel to the bone to separate.

Rub each side with spice mix. Place in slow cooker on low for 4-6 hours.

Fifteen minutes before eating, put ribs on medium heated bbq. Baste with honey garlic sauce. Let sit five minutes. Flip ribs over and baste again. Let sit five more minutes before pulling off of bbq.

Remember to keep an eye on your ribs while they are on the bbq. Watch for flare ups.

Use extra honey garlic sauce for dipping if desired. Serves 2-3 depending on your guy. 😉

Dark Chocolate Cherry Ice Cream (Dairy Free/ Refined Sugar Free/ Vegan Option/ Paleo)

So spring is taking its dear sweet time! It has finally started to warm up enough that I have run the wood stove for almost a week. Yay!! I have been craving some ice cream.

Not just any ice cream, Dark Chocolate Cherry Ice cream! When my daughter worked for Reid’s Dairy many moons ago, back when I still had regular dairy, I would order this kind.

Dark Chocolate Cherry Ice Cream

I made this many times last summer. So delicious!

If you don’t have an ice cream maker don’t worry. There are instructions for that. This time I made it without my ice cream maker, because it wasn’t frozen 😉

Dark Chocolate Cherry Ice Cream (Dairy Free/ Refined Sugar Free/ Vegan Option/ Paleo)

2 -400 ml cans of coconut milk (11-17%)- kept in the fridge overnight **

1/2 c. honey or maple syrup for vegan

2 egg yolks for non-vegans (not necessary)

2 Tbsp. vanilla

1 c. chopped pitted cherries

1 c. dark chocolate-dairy free (at least 72%)

Mix cold coconut milk, honey, eggs(if using) and vanilla together in food processor then put into an frozen ice cream maker and mix for 20 minutes. Just before time is up add  chopped pitted cherries and  chopped dark chocolate. Make sure its mixed well. Consistency will be soft ice cream. Put into small individual containers and freeze. When you want to eat it just take out a container for 10-15 minutes before hand to soften.

*If you don’t have an ice cream maker, put ingredients in bowl into the freezer; stir every twenty minutes for about an hour. Then add cherries and chocolate. Keep stirring every 30 minutes hour an hour.

** Yes you have to put your coconut milk in the fridge overnight. **
